This blueberry cottage cheese breakfast bake is gluten-free, protein-packed, and naturally sweetened. A cozy and nourishing start to your day.
Ingredients
1 cup cottage cheese (full-fat preferred)
2 large eggs
3 tbsp maple syrup or honey
1 tsp vanilla extract
1/2 tsp cinnamon
1 cup almond flour
1/2 tsp baking powder
1 cup blueberries (fresh or frozen)
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
2. In a large bowl, whisk cottage cheese, eggs, maple syrup, vanilla, and cinnamon.
3. In a separate bowl, mix almond flour, baking powder, and salt.
4. Combine wet and dry ingredients until just combined.
5. Fold in blueberries gently.
6. Pour batter into prepared dish and spread evenly.
7. Bake for 35–40 minutes until golden and center is set.
8. Cool for 10 minutes, slice, and serve.
Notes
Store leftovers in the fridge for up to 5 days.
Best served warm or at room temperature.
Toss frozen berries in 1 tbsp flour before folding in.
