Description
These chocolate pistachio cheesecake bars combine rich cheesecake, bold dark chocolate, and crunchy pistachios in a perfectly sliceable dessert bar.
Ingredients
1½ cups chocolate cookie crumbs
6 tbsp unsalted butter, melted
16 oz cream cheese
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
4 oz dark chocolate, melted
⅔ cup roasted pistachios, chopped
Instructions
1. Preheat oven to 325°F (163°C). Line an 8×8-inch pan with parchment.
2. Mix cookie crumbs and melted butter. Press into pan and bake for 8–10 minutes.
3. Beat cream cheese until smooth. Add sugar, eggs, and vanilla.
4. Fold in half of the pistachios. Pour over crust and level the top.
5. Drizzle melted chocolate over the batter and swirl with a knife.
6. Bake for 30–35 minutes until set but slightly jiggly in center.
7. Cool completely, then chill for at least 4 hours before slicing.
8. Top with remaining pistachios and serve chilled.
Notes
Store in an airtight container in the fridge for up to 5 days.
For clean cuts, use a sharp knife dipped in warm water.
These bars freeze well—wrap tightly and thaw overnight.
