Kourtney’s Flourless Chocolate Cake is a rich, gluten-free dessert with deep chocolate flavor and minimal ingredients. Perfect for clean indulgence.
Ingredients
1 cup dark chocolate chips (50% or higher)
1 stick unsalted butter (113g)
1/2 cup granulated sugar (or substitute)
2 large eggs
2 tsp vanilla extract
Pinch of salt
2 tsp cocoa powder
1/2 cup heavy cream (for ganache)
1/2 cup dark chocolate chips (for ganache)
Fresh raspberries (optional topping)
Instructions
1. Preheat oven to 375°F (190°C). Line a cake pan with parchment paper.
2. Melt chocolate chips and butter together in a bowl until smooth.
3. Whisk in sugar, eggs, vanilla extract, salt, and cocoa powder.
4. Pour the batter into the pan and bake for 20 minutes, until the center is set but still slightly soft.
5. Cool completely in the pan.
6. Prepare ganache by heating cream and pouring over chocolate chips; stir until glossy.
7. Spread ganache over cooled cake.
8. Top with fresh raspberries or preferred garnish.
9. Chill or serve at room temperature.
Notes
Use monk fruit or coconut sugar for a refined sugar-free option.
To make it vegan, use dairy-free chocolate and flax eggs.
Best served with vanilla ice cream or coconut whipped cream.
